I have always wanted to try this, do you use a rub or just meat and heat?

I always use some kind of rub. In the video I used a sweet and spicy rub. Most bologna has a little chicken, beef and pork in it so any rub will do lol

mortadella bologna?

damn... I took a look at the video and realized...
I was thinking about a lasagna, that is usually called "alla bolognese" (Bologna style) here ...
then I understood that is a litte mortadella!
here can be cooked in direct grilling in slices, roughly an inch thick, and with some drops of lemon juice or better with balsamic vinegar
