Last time I smoked some chicken, my wife asked me to toss a couple of bell peppers on the smoker, too.
So I did...and they came out very weird. When I cut into them, they were very soggy. I didn't smoke them very long, but I didn't cut the ends off either.
So how do I fix that? I don't mind if they're not crunchy, I just don't want them soggy. I'm kind of looking for the texture you might get for grilled bell peppers for fajitas.
Any tips?
