Been a while since I posted a cook, figured I'd break out with this....and post in the gravy throwdown too! :rockon:
Here goes.....
Short Ribs, seasoned with Kosher Salt, Black Pepper and granulated Garlic.
Then it farkin hailed....
Back to our regularly scheduled program...
While the coals were going, I chopped up carrot, onion, celery and threw in some thyme....
Short ribs get a char
Vege goes on with some pats of butter...
Performer is cruising along...
The vege gets veal stock with red wine, bring to a simmer and the ribs go in the pool....
Ribs are close to done, time for a rest...
More thyme and the liquid goes for a simmer to reduce for the gravy...
Plated....
So tasty...
