Shepherd's Pie re-imagined

I can not take credit for this idea as I saw it either on TikTok or Instagram, but knew I had to give it a try.

First step is to bake the potatoes and hallow them out.

Make your standard Shepherd's pie mixture and then stuff into the potatoes.

Mash up the part of the potato you scooped out with your choice of ingredients. We used sour cream as we had some about to go bad. Cover the potatoes and put into the oven to heat through.

We served it with a side of broccolini and it was delicous. Now I want to try other dishes stuffed in a potato.

Really really tall broccoli. Fantastic tossed with olive oil, salt and pepper and grilled for a few minutes on each side.
