This weekend my GF and I took a trip up to Woodstock, VA to meet Craig (@Shencosmoke) and check out the Woodstock Brew House and 1752 Barbecue.
Andrea and I arrived around 10pm and got settled into our Airbnb and then went up to the brewery. They were closing up soon but Craig greeted us immediately and promptly took us up to the bar to get our empty hands around some pints.
Here was their beer list. My favorite was the Muellerstadt Lager and Andrea's was the Tipsy Squirrel Brown Ale. I had 4 lagers and Andrea had 2 Brown ales.
He took us for a complete tour of the building. We got to see the whole place. The kitchen with the stumps smoker and the badarse cutting table, the brewery vats, and walk ins, and the yeast rooms etc. Such a great operation going on.
At 11pm, we helped Craig carry up some pork butts and brisket that he was putting on the Stumps for lunch tomorrow. Then it was time to go sleep.
We went back to the brewery at about 2pm to eat some lunch before we left town to go visit my sister. Craig once again greeted us with welcome arms. We ordered our food and then sat down out of the way of everybody and just enjoyed the renovated factory and the atomosphere of the place.
We were still a little bit full from our late breakfast so we ordered small. 1/4lb brisket (point meat), 1/4lb pulled pork, 1 fatty slider, 1 side of mac and cheese, and 1 side of brown beans. Here is the food porn shots. I think Craig needs to recalibrate his scales if that is 1/4lb brisket and 1/4lb pulled pork and a brewery made root beer and ginger ale.
I will say talking with him, he shared his passion for cooking with us. We talked about ingredients he sources locally such as sorgrhum, bacon, and sausage. Andrea and I actually went and picked up some of the bacon and sausage at the country butcher he goes too (it was that good). I plan on hitting him up to possibly use his source local source for sorgrhum, since my source is a little farm that doesn't always have it stocked.
Craig is a down to earth guy that made Andrea and I feel like VIPs. His bbq is hands down the best I have had from any restaurant in the state of Virginia and a majority of many other states. I would also put it as better than a majority of back yard cooks bbq I have had. Craig has something special going on in Woodstock, VA. Everybody needs to check out the Woodstock Brewhouse and 1752 Barbecue. You will not be disappointed.
