Running the KBQ today

Decided to toss on a brisket and some pork belly. It’s been a bit since I ran the KBQ due to being out of seasoned wood. Love the food this little guy turns out.

Pretty happy with how the cook turned out. Pork Belly was spot on and tasted great with good bark. Brisket was also good but feel that I rested too long. Bark was solid and taste was there. I think shortening the rest next time will make it even better.
