Roquefort, Lardon, Mushroom, & Onion Melt

damn that looks good! gonna have to add some of my homemade bacon to my ground beef next burger time.
I don't normally add the bacon to the grind because I like my burgers medium rare and the fat doesn't have time to render out and flavor the beef. But I cooked the burger a little more than medium with all the fat and cheese. It was very good and loaded with a host of flavors.
 
Awesome food as always Jed. You had my attention as soon as I read Roquefort! I'm a sucker for them all, Stilton, Danish blue, Gorgonzola etc. Man that must taste sooo good.
