now that i have my ribs all trimmed up, what's the best way to cook all these trimmings?
 
Cut them into strips and cook them like the ribs.

Rib trimmings are the universal food - you can use them in chili or beans, deep fry them, grind them up and make sausage, meatballs, meatloafs, use them in gumbo, or just throw them in the smoker for a "pit man's treat".

It's a lot like Bacon - there's really no wrong way to make them, especially if you're going to keep them for yourself!
 
I use them pulled for Keri's Hog Apple beans. Well, except for the few used for Cook's treat.

They don't take as long to cook as ribs so keep an eye on them.
