I feel your pain. My best cooks were enjoyed by only me. It's hard when there's a lot going on to nail everything.

Does the holding period before returning to the smoker increase juciness? Like resting a steak? I've never done that with ribs.

It was part of an Adam Perry Lang recipe. I figure it gives time for reabsorption and slows things down. If you've ever listened to my ramblings you know i like to finish things slowly.

Opening up the foil does cause a crash cooling. Possibly tightening things up.

Whatever it is it works for me.
