I was 'gifted' some frozen shrimp over the weekend so I grilled some for a quick lunch.

Grilled Shrimp with Cauliflower and Mushroom Risotto

Shrimp-Cauliflower-Risotto.jpg

I seasoned the shrimp with Todd's Crabby Dirt. Todd used to be a member here, not sure if he checks in anymore. Then I grilled them for just a couple of minutes per side over medium heat.

For the Cauliflower Risotto I used frozen cauliflower rice, cremini mushrooms, a little chicken stock and parmesan cheese. I sauteed the mushrooms and cauliflower, added some stock and parm cheese and let it reduce until creamy.

This was very easy, but delicious!

Ron,

SOLID looking plate right there! Nice job sir.

Thanks for posting,
Greg

Well I had a chicken leg that was about to go bad, so there. :mmph:

Looks fantastic, Ron! Great shot of excellent food right there! :clap2:

Looks awesome some MAD skills there in the kitchen there brother.
We are going to the beach next week and with all that is going on in the world we will be eating in.
I would love to recreate this for one of our meals one night.

Any tips on the Cauliflower risotto. I love making real risotto and have been on a low carb kick lately. I love Cauli rice and make it all the time but never thought I could even get close to faking the creaminess of a risotto with it. I suppose the cheese helps.

The shrimp looks fantastic but the cauliflower risotto recipe sounds very good!

Thank you for sharing the recipe!
