I do something similar as well as dredge in fine ground bread crumbs, then bake in the Q. The crumbs absorb the bacon fat and get crispy.... if ya like crispy as another texture component to the poppers.
 
I just mix equal parts of cream cheese, grated sharp cheddar, and leftover chopped pulled pork together to make the filling. 1-step process to fill the peppers and the leftover filling mixture is great to just eat on crackers. I've actually made a cheese ball type thing out of it and people thought it was great.
