I broke in my grates for the Char grill 980 by doing pork loin chops.
I used EVOO and Traegers Whiskey dust maple and bourbon flavor for the rub, once that was done I went out to start the grill for my wood I used hickory and 1 chunk of mesquite. I took them off at 155 and they were tender and juicy with good flavor, very happy with how they turned out!

Just got a 980 - how'd you get that nice sear? I've used it a couple times and have yet to be able to get a good crust/sear going.

I bought the GrillGrates not to long ago and this was the first time using them, I had the controller set at 400.
If you are using the stock grates and put the controller at 400 (if you have tried that disregard) and see what your results are if not to your liking try a higher temp.
