The only part of this that was done over fire was the charred onions, but it was pho king delish!

My go to is tripe, brisket, flank, tendon, meatball!
 
Not sure I really know what I'm doing, but I did have a small, long haired, Vietnamese man yelling at me cause I was doing it wrong once. I now do it like he did!
