Some CostCo St Louis cut spares on the Blue Performer today. Anticipating about 5.5 hours. Oakridge Competition Beef and Pork Rub with mustard underneath (I am really hooked on this rub for pork), Kingsford Competition Blend and Pecan Wood Chunks. Two hot coals at the end of each basket works nicely. :razz:

Done. The ABTs were beyond perfect. The ribs were of excellent taste/flavor and done pretty close to optimum, maybe needed another 20 minutes or so. Minimal smoke ring but I find that with the Blue Performer as opposed to the WSM. Overall successful. I had a nice dinner.
