Family showed up at Christmas and dropped some deer in my freezer. Mostly doe deer from Managed Land Doe Deer permits in south Texas. This cook tasted fantastic although I did leave it in reverse smoke mode a tad longer than needed. Juicy and tender with that delicate doe deer flavor. Mesquite hickory and oak blend. Venison German sausage too.
When I hunted a lot I was a really good venison cook. I’m not as good as I once was. Timing was off.
