I make several versions of fresh chile sauce that I freeze and use all year.
This one was made using fresh red New Mexico chiles (guajillo and New Mex Heritage) with tomatoes, onions, garlic, a ripe (red) poblano, and a few jalapeños for heat.
All ingredients were roasted in wood fire embers.

Would if I could.
But you should have pretty good access to fresh chiles there in west Texas.
I grow my own. And although I can manage to get good seed varieties to grow, I don't have the optimum climate.
But I make do with what I have.
