I've only done 1 cook on mine so I'm hardly an expert but I'm guessing the naturally draft of the smoker should be sufficient. I think the wind not hitting the fire box will help in having a more stable temp, or less fluctuation if you will. If the offset is out of the elements (wind, rain), they can't influence your cooker.
I'm not sure, we got all the timber from a local shop specializing in this kinda thing. My BIL build a 8mx4m shed in his backyard using this stuff and he suggested it. It's impregnated wood.
