So I got to thinking over my morning black light roast. Where do ugly Brisket go? Thin uneven flats, negligible point bumps, hard stiff in the cryo. 180* of what I’ve been taught. United has choice 1.88#. Think Im going to look for an ugly duckling and show it some love.

Ugly briskets can be used for the rarest meal of all: the Intentional Chopped Brisket Sandwich (as opposed to the "Ah *$&#, this brisket is ruined. Quick, do we still have that bottle of Sweet Baby Ray's?" variety).

Also, did I catch both a Bob Seger and a Whitney Houston reference? Sweet.
