I usually spray and foil about 180 and then take them to about 200 before putting them in the cooler for an hour or so. But, experiment and take notes so you get it dialed in the way you like it.

Not so good... Must have had some water in the coal pan so the coals on one side pretty much turned to mush :( Just added Half a chimney of lit lump to get her back up to temp. Meat dropped to 135- 140. Looks like it will be a long night. My own fault for not drying it out better. The fuel on the right of the picture was saturated.

opened top vent a crack and bottom wide open at 1. 1:45 and my temp is way up. don't want to open it. Judging by the ECB gauge ( won't call that thing a thermometer! ) I figure it is around 240 - 260 .... maybe I should check my thermo's! Meh, I'll wait till 2 :)

foiled!! it's been an interesting day .:icon_sleepy Lots of things learned for sure, I will post some more mods that would have helped. Biggest lesson which I should have known.. keep that coal pan dry and cooker out of the rain.:rolleyes:

Here they are and some meat off the bone I took out of one shoulder. Temps were 160 - 165. I hope they will be fine in the cooler I don't think I'll make it to the pull tonight.:icon_sleepy.
