This turned out ridiculously good tonight. Marinated with mushroom soy and Walkers Wood jerk seasoning for 24 hrs. Cooked on drum 375-400 for about 45 min. Pulled when breast was 160. Was PERFECT! Skin had a slight crisp to it you could hear a mild crunch when breaking down. Served with homemade peas and rice and sweet plantains.

WOW... with the drool wiped from my screen I can’t stop staring at that finished plate :)
 
Thanks fellas I’m really loving this drum. Some of the best chicken I’ve produced had that nice roasty chicken texture curious to try this with some simple spices like a SPOGOS rub or something similar. Most of the chicken I’ve made in the past had either gummy skin or charred/burned skin from grilling.
