Seeing Greg considering polenta in the smoker reminded me of smoking some store bought (tom thumb/randal's, the Tx. branch of the Safeway chain) focacia bread. It has jalapenos mixed in and is topped with cheddar and more jalapenos. I tossed that into the smokebox and sliced up some chicken breasts I was grilling for fajitas and put them on top. Pulled it out when the cheese was nice and soft and topped with sour cream, pico de gallo, and a little guacamole to snack on while finishing the chicken and beef on the grill.
