Howdy all! Just defrosted a cryovac pack of spares from good ol' Restaurant Depot, going to put them on the UDS tomorrow. It has been an age-and-a-half since I've attempted ribs.

Would love some opinions on what to do with these lovely piggies.

1) Trim them to STL style or go full spare?

2) Rub them tonight or tomorrow?

3) I was planning on 265 - no wrapping or foiling or spritzing or spitting - Bend check after 4ish hours

Thoughts?

I prefer to buy SLC's but if I got full spares, I'd cook them that way. I season as my pit is warming up. I normally do SLC's at about 4 hours at 275. Check for half an inch of exposed bone and the bend test.
