I am curious. When frying chicken in oil, sometimes it is best to coat the chicken and then let it dry on a rack for a while before frying. This helps to set the rust. Does the same apply for this method?
I did not put any thought into letting them dry out, I did stick them back in the fridge for an hour after they were dredged because I wasn't ready to cook yet.
