How not to trim a brisket

Ouch.....I got these for fileting tuna and other big fish. They also work well while trimming meat. I wear one while slicing meat (on my non-slicing, holding the meat hand)....

wow, I wish I would have had these when i was up catchin silver salmon on the Kenai in Alaska. I was filet-in salmon on the river bank and sliced open my finger. It was such a sharp filet knife that i didn't even know I cut it until the blood came on. That was painful lesson!
