Some of you might have seen my hog pit I acquired to cook the whole hog for by birthday bash in November.
I have done a couple of test burns, but this is the first actually cooking I’ve done on it.
Dry brined a 4lb skin-on belly with harvest brine and let sit for 48 hours.
Today I got the hog pit fired up and the belly is on.
