Here are some pics from my most recent cook. Did an 8lb pork shoulder in about 6 hours. Started around 275, and let it slowly creep up to 325 where it spent most of it's time. Used cherry wood. Went light on the smoke to appease the crowd.
Beans were Alton Browns recipe(again). Did them in the oven this time to remove variables. They came out awesome. I actually followed the directions correctly this time which greatly reduced cook time(I forgot to bring to a boil last time).
Used ceramic briquettes in the water pan. Much easier than water.
Enjoy! I know I did. Plating pic was actually leftovers 2 days later. Leftovers were spectacular!!
