I have 6 large chicken hind quarters that I'm smoking on Friday afternoon or Saturday morning. How early can I rub it on? I would like to get things prepped ahead of time since I'll have family in town. What would be too long?

You could easily go 24 hours, even 48.
 
Perfect John! I knew you would have a quick answer :-D. I use it on all my whole birds and bone-in breast, but have never used it on individual pieces.
