Texas Bash is tomorrow and looks like plenty of meat being cooked by folks so doing some smoked mac and cheese and a couple of chocolate chip bourbon pecan pies.
Picked up some dry aged steaks from my butcher this morning, very curious about them.
Have a 3-day weekend and even thought the weather is still ****ty, I WILL FIRE UP THE STICKBURNER. Going meat shopping tomorrow so something is bound to end up on one of the cookers.
Nothing yet. Got to finish up a gasket replacement tonight. I upgraded since 270 is offering rope gaskets now. Never a fan of felt.
Should be set by saturday night to cook. Not sure what yet.
Maybe tonight I will cure that pork belly I have been sitting on.

Pastrami and salmon. Probably add some sausage because you should always add some sausage. Have some fresh made pumpernickel and caraway rye bread for sandwiches. Some good mustard, pickles, Swiss cheese, and shasta of some sort.
