Again.
This time I went with a couple of different fillings, shrimp and a home canned wagyu burger mix.
Picked up some cactus pads at the store. Burned and scraped the thorns..
Scraping inside of a plastic bag helps contain the mess.
Cut pouches into the cleaned pads..
gathered filling ingredients... grilled corn, garlic, shallots, scallions, cactus, asadero cheese, cilantro...
sauteed the onions, garlic, cactus, scallions in butter...
added the grilled corn and some black beans..
Divided the mixture in half and added a jar of the home canned beef to some.
Gathered the stuffing ingredients. The beef, cactus, corn, black bean, onion, garlic mix.
Some shrimp, and a bowl of the stuffing ingredients without beef.
cilantro and asadero.
stuffed some beef pads, added cilantro and cheese...
stuffed some shrimp pads with the veggie blend, cheese and cilantro..
Stitched closed with corn husk..
Onto the grill with indirect heat.
I turn the pads over when the juices start bubbling from the cactus.
Cooking the cactus on both sides.
While the cactus pads cooked, I heated a pan of home canned hatch chile salsa..
dipped some tortillas in the sauce, topped with cheese, onion and cilantro. Fried til crisp.
Sliced around the "lid" of the stuffed cactus pad..
Peeled the lid back and supper was ready..

and the shrimp stuffed cactus..
The fried hatch chile tortillas...
Washed down with a cold beer..
I liked both the beef filling and the shrimp. I didn't have a favorite.
