Full spares, racing the rain...

Been a while since I last posted a cook, but I'm back :mrgreen:

Two racks of full spares going on the WSM with oak and cherry.

Got it ramped up to 325 for the warm up, should settle in around 290-300 after adding the meats.

Hoping I can beat the storms, got a bit of a late start today...

Oakridge rack... Both finished in about 4.5 hours with no wrap.

A couple sliced shot quickies. Probably need to sharpen my knife, hacked them up a tad today with a more firm bark.

I was able to beat the rain and they were pretty good eating ribs.
Not my best work, I'd give them a 7/10.

I raced the rain for years then I built a tin top cover over my patio.
I grill or smoke when I want too, you grill when you can.
It was hot work to build it, but I smoke in the rain, and I also keep a big patio fan for comfort in the Alabama heat.
