Fresh cayenne peppers....what to do?

I have peppers with every meal. Dried, powdered fresh whatever. I just harvested a couple of Rocotos from a plant and bought a whole bunch fresh yesterday. Here is what I like the best specially if its coming from the garden and I plan to eat them relatively quickly. I simply freeze them and when its time to cook take one out and use a grater to put into the food. They keep amazingly well both in flavor and in heat. All the other suggestions are great and I've used them but the simplest is just freeze. I've also mixed habs, cayenne and others in a food processor and frozen the mix, again just cutting chunks off to put on rubs chilis casseroles etc. I do not devain any chiles as to me thats like decaf coffee - not done.
