These are the shoulder CSRs. I did them like I cook ribs, so whatever you like to do with ribs, do these the same. The probe tender part at the end is important though. I was going to pull them at one point, probed, then decided to go another 1 hour. So glad I did that.
For those not sure what to feel for, stick your probe into a jar pf peanut butter. Works for all ribs.
 
I have always seen them labeled as country style ribs here,I have not done any on my pit boss but going to change that this weekend I hope,they are also great thrown into a crock pot with sauerhraut
 
I've been dredging my memory.
They used to call CSR's Texas ribs, western ribs or western-style ribs.
