I've never made armadillo eggs.
I wanted to make something that was part fattie, part popper. (Fat Pops)
I realized that that is close to AE. Oh, well.
Sausage, Anaheim peppers, Pepper Jack, Rub, and Bacon.
(I used Anaheim because I wanted them small and kids would be eating them.)
Split and clean peppers. Insert cheese.
Wrap in sausage
Roll in rub
Wrap with 1/2 strip of bacon
Smoked 225* for 30-35 min
