I made some of Emeril's "pork/anduille" burgers the other night. grilled one up for dinner tonight with grilled red onion, smoked gouda cheese and some homemade roasted poblano mayonaisse to go with it. Put it on a grilled pumpernickel bun. yum yum :)

Is that just Emeril's sausage turned into patties? And how about some details on the poblano mayo?
