It turned out to be my best brisket yet and this one rocks the house. Cooked it to 195 internal and let it rest for a couple hours while I ate the tip (Forget the burnt ends! URP!!!).
Moist, tender & full of flavor and I believe the decision to upgrade from select grade to choice grade helped improve the quality!
Leaving a plate for my wife when she gets home from the office while I take a sample baggy with me out to my daughter's volleyball game so she can chow down on some good yummies!

Looks good. I thought I was going to see a pix of you taking a bite out of a Brisket sammie or something.
