I’m going to do our bird on the performer today; have brined the bird overnight with Ferguson Henderson’s brine and am finally getting my way and BBQ ing turkey at Easter and not having to do the whole stuffing, gravy, carrots and potatoes routine as usual.
I need a positive result with tonight’s meal if I want to do this again next year.
Any tips for time and temp? Quick? Slow?
Spring style sides to go with the bird?
Was thinking pit beans......

12lb, allow about 2 hours at 325-350 deg. Best way is to cook the breast to 160 deg, dark meat to 180. It will rise around 5 deg while resting. Here is how I first cooked a turkey on a Weber, still works fine, with the exception of the breast temperature.
