Turkey on a Spit

Fresh 13 lb turkey, dry brined, and smoke-roasted on the santa maria spit.
A little windy, but couldn't expect much better Christmas Eve weather.

Spinning with red oak at about 325-350

cooked 3 hours to IT=160/165

all dressed and ready to party

accompanied with dressing, mashed taters, cranberry, rolls, and gravy

Excellent flavor, very juicy. Love the spit.
