I tried 3-2-1 and it was way too long, everything turned to mush during the foil period and didn't tighten up much at the end. I have found 2-1-1 to work best on both my offset and WSMs. I'm working up the courage to go all Bludawg on a couple of racks and dispense with the foil. Problem is, I bought one of those boxes of foil at Sam's and I'm only about halfway through it. If I quit foiling, it's gonna last a long time because my spousal unit only uses non-stick Reynolds Wrap.
