At this point I pretty much cook ribs by time. Hang 2 hrs. About 30 minutes wrapped then boated for 30. Once in a while I'll make a slight adjustment but its pretty consistent.
 
OK, gonna be that guy. I've done it both ways feel/look and temp. First, your looking for color and some pullback, but if temping between the ribs, temp would be about 170-175. JMHO.
 
I use the bend test but this last time I temped for
Kicks and they were at 200-202
