Beef Bourguignon

2 1/16 pounds beef stew meat
1/4 pound bacon -- diced
3/8 tablespoon garlic -- minced
1/4 pound onions -- chopped fine
5/8 pound carrots -- sliced
1/8 teaspoon cloves -- ground
1/4 teaspoon pepper
1/4 gallon demi glace
1/4 quart burgundy
1/4 pound pearl onion
1 1/16 pounds mushroom -- sliced
Brown Bacon, then add the garlic, onion, beef cubes, cloves, pepper, and brown all sides of the meat.
add demi glace sauce and burgundy wine, simmer for 1 hr
Saute pearl onions and mushroom until tender.
add sauteed onions and mushrooms to beef bourguignon and simmer for 15 minutes
Place beef bourguignon in a 4" full pan
Serve over top of kluski noodles
