Chili atop cornbread pancakes

The wife and I have been wanting chili of late, and since the Chili TD ends soon, I figured that today was the day. I tried to cook as much as I could outdoors to qualify, and darn near succeeded in doing so with most of the ingredients.
I started by cooking the peppers and onions on the Blackstone to soften them up, then I cooked the marked down 1/2 London Broil on the grill. I split it in half to thin it out and lessen the cook time so that I wouldn't under or overcook it, then cut it into bite size pieces before adding it to the mix.
I then put everything in the crock pot with the usual ingredients to simmer for a few hours and get delicious!
The cornbread pancakes were just the Jiffy mix cooked on the Blackstone.
I served the chili on top of two pancakes, topped with cheese, sour cream and a few green onions, and accompanied by a Sam Adams Octoberfest (gotta enjoy them while I can). This meal did not suck and was actually one of my better creations. Thanks for looking.

Me dear 'ol Mum made a meal consisting of a cornbread pancake then a over easy egg followed by some raw onion rings, then a ladle of hot stewed tomatoes, then repeated
for a second layer.
Very few things I would balk at eating, I'm sure I whined the whole time but at my house you ate what was served or you didn't eat!

No, there was a can sitting in the pantry and I contemplated for a second, but because the wife is not a huge fan of any peppers, I didn't add any. There would have been a whole lot more of the bell peppers in there if she liked them, but she realizes we need some for flavor, so I don't overdo it. Maybe I need to make two batches next time....
 
Fried cornbread was a staple at our house when I was a youngster. We generally had them at lunch. Never had any Johnny cakes or Hoe cakes to my knowledge. Just simply called fried cornbread.
They were mom's regular cornbread mix made with Aunt Jemima cornbread mix fried instead of baked. They were usually about 4-5" in diameter and 1/2 to 5/8" thick.
Much quicker to cook and hand sized to start with.

You mean “Pearl Milling”,the snowflakes killed Aunt Jemima.
 
I love cornbread pancakes but I just cannot make myself use “Jiffy”.Have tried it more than once,just cannot wrap my mind around it.The meal looks tastee though.
 
Never made- never ate a hoe cake.

But now I want to.

In the past year or so, I've found myself getting tired making the same old dishes- just burned out. When the wife asks "what are you doing this week?" Lately my response has been "dunno- but it needs to be *something different* "

This certainly qualifes - at least for me. Thanks for posting it up.
