The wife and I have been wanting chili of late, and since the Chili TD ends soon, I figured that today was the day. I tried to cook as much as I could outdoors to qualify, and darn near succeeded in doing so with most of the ingredients.
I started by cooking the peppers and onions on the Blackstone to soften them up, then I cooked the marked down 1/2 London Broil on the grill. I split it in half to thin it out and lessen the cook time so that I wouldn't under or overcook it, then cut it into bite size pieces before adding it to the mix.
I then put everything in the crock pot with the usual ingredients to simmer for a few hours and get delicious!
The cornbread pancakes were just the Jiffy mix cooked on the Blackstone.
I served the chili on top of two pancakes, topped with cheese, sour cream and a few green onions, and accompanied by a Sam Adams Octoberfest (gotta enjoy them while I can). This meal did not suck and was actually one of my better creations. Thanks for looking.
