Before I saw the new throwdown I bought these boneless chicken thighs. They were BOGO, so 6+ pounds for around $6. I do like thighs. I decided to make a marinade for them using vegetable oil, cumin, green chili powder, paprika, oregano, onion powder, garlic, salt, pepper and paprika. I trimmed off the skin and fat that was left (did I mention it was BOGO), and cut it into strips. After letting it soak for 19hrs I threw it in a hot skillet with some onions, bell peppers and mushrooms. Cooked it up and rolled them into Chimichangas by rolling the chicken and veggie mix with black beans and sharp cheddar. Placed them on an electric skillet and pressed them until golden brown.
