somebody shut me the fark up.
Started with 2lbs of Grass fed ground beef and 1lb of ground pork.
Joining them at the party..Onion, Basil, Fontina Cheese & Heavy Cream
Tossed in some Peppery Lime, mixed lightly and topped with Q-Salt.
Into the smoker (loaded with charcoal and cherry wood splits) at 225F for about 2.5 hours.
Then put over the fire box to sear.
Resting
Sliced
Plated
This was really, really good.
Son and wife have proclaimed it as best yet.
Recipe:
2 lbs ground beef
1 lb ground pork
1 onion, chopped
1 cup of grated Fontina cheese (some coarse cut chunks add a nice texture)
1/2 cup chopped fresh basil
1/4 cup heavy cream
2 tsp Peppery Lime
Mix ingredients above to incorporate, but don’t over mix. ..I fold gently by hand.
Top with a liberal covering of Q-Salt.
Toss in smoker for 2.5 hours at 225F, reverse sear
Slice and serve.
Note: My wife and son are both on keto type diets, so I left off the sauce..however this is incredible glazed with a good bbq sauce
