Yes I usually soak the planks for around 30 min to an hour.
Put on direct heat for just a bit, flip the plank over and put on indirect side.
Put what ever on top your cooking.
I saw a sale on alder planks years ago and bought about 20 of them. Other than planking food, I saved some of the pretty ones and use when vacuum sealing smoked salmon sides. The plank prevents the fillet from smashing AND the plank works as a cutting board if you gift them to friends or take them to a party.
