Catering Companys Christmas Dinner

Here's most of the menu that I will prepare.
2 Briskets sliced 6-8 # average
15# of pulled pork
3 whole chickens cut up
6 slabs cut st. Louis style
Texas potatoes
Keri's beans mutiplied
1 gal coleslaw
40 ABTS
There will be a few more sides added.
Also I have a good recipe for a Punch Bowl Cake thinking of throwing that in.
 
For the liability form, I would do a search online for a standard form that excludes you from liability. The fact is - I've never known someone to get sick from real bbq. You guys might know different. I have known people to get sick from "chain" bbq but I don't know the details.

I know if I suspect a whiff of something with the meat or ingredients I throw it out. it will drive my cost up a little more but nothing like someone getting sick.
 
I have a commisary, has a health department approved kitchen. He says I can use his kit. and his liability insurance will cover. He's checking to make sure. Still going to do the form with the company, couldn't hurt to have it too.

Around any place that I take ABTs, 40 is only going to feed 15 people. That's 40 ABTs made from 20 peppers.
