Picked a bucket of Figs this afternoon. Being a Florida Cracker I wasn't really sure what I wanted to do with them. But hey what the heck, everythings better with bacon.
These babies were ready to roll!
Rounded up all the rest of the players
Carmelized some onions in bacon fat and a pinch of sugar.
Cubed and browned the belly and bacon together with 1/2 cup of brown sugar and a 1/2 cup of Jim Beam to deglaze the pan after the bacon had rendered.
Added 2 lbs of quartered and pitted figs, cayenne and red pepper flakes, rice wine vinegar and ginger minced with garlic.
Simmered for an hour.
Took the immersion blender and rough ground it to the texure I liked.
Into the fridge it went for a chill and awaiting further orders.
