Fired up the smoker on Sunday. Had purchased some beef cheeks to make barbacoa tacos but unfortunately the meat was bad when I opened up the cryo.

The Costco business center only had 1 prime brisket that was small so I decided to go with a big choice brisket. Cooked the brisket around 275, finished in 8 hours. I was pleasantly surprised how well the brisket came out, the flat slices were nice and moist.
Spareribs were done after 3 hours, 1 hour in foil. Pork butt got some vinegar sauce, looking forward to those leftovers tonight.
