Black Ops Brisket (PrOn) = sliced + burnt ends + tacos

Found a nice small-med CAB brisket, trimmed a bit and covered w/ Oakridge Black Ops (if you haven't tried this one, you're missing out...). Look like this:

Off the smoker the flat and ends, plus some bonus bologna, looked like this:

Sliced she looked like this, maybe a little overcooked:

We really enjoyed it, especially the burnt ends. Black Ops makes fantastic bark IMHO. Added some Shiner, potatoe salad and beans also... didn't hurt the meal any.

Lunch tacos the next day weren't too bad either:

Wrapped in butcher paper once bark was good and set.

It’s going pretty good in my neck of the woods. 2 deers down. One in Muenster being made into their great jalapeño and cheddar cheese summer sausage. Ready for quail next - second only to turkey.

Hope you’ve been out enjoying the outdoors and harvesting groceries.

I agree. Not sure which I like better pulled pork tacos or brisket tacos. Too close to call. Heck, it’s America, at least for now, cook both!

Yep. Fischer’s in Muenster, Tx. It’s a small piece of heaven on earth as far as I’m concerned. T
