Ladies and gents,
I like all kinds of food and cuisines be it street eateries or fine dining. When I'm in the mood to eat something simple (sort of) and hearty, a nice wet burrito that's prepared right can't be beat. There is a TD currently to recreate your restaurant favorite and my choice is obvious.
For my choice of meat I decided on pork so I bought a small butt
Deboned it
Trussed it, rubbed it with a quick pork rub I made and decided to spin it on the PBC with the new Onlyfire rotisserie kit :thumb:
Let it do it's thing
In the meantime made some pico de gallo
Grated some sharp cheddar and manchego
About 1 hour 20 mins in IT was 150
Another 50 mins and I pulled at about 185 ish
Really moist
Chopped it
Time to assemble the burrito and started with two 14" tortillas :shock: Rice first
Refried beans
Load of the pork
Cheese
Pico
Mexican cream
Rolled and on the CI to seal the bottom. Mind you that's a 12" Lodge :becky:
Bottom sealed
And warmed up the top
Plated. Now pics don't really show it but the thing is HUGE. A bit less than 12" long and filled up.
